1 cup butter or margarine, softened
1 1/2 cups white sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs, beaten
1 teaspoon vanilla extract
1 (8 ounce) can evaporated milk
1/2 cup frozen whipped topping, thawed
1 1/2 cups honey or brown sugar for garnish
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, cream together the butter, sugar, flour, baking powder, baking soda and salt until smooth. Beat in the eggs, one at a time, then stir in the flour mixture. Mix in the vanilla, evaporated milk, and whipped topping. Fold in the honey. Spoon batter into prepared muffin cups.
Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Cool in pan for 10 minutes, then turn muffins out onto a wire rack and cool completely. Garnish with green onions!
I added frozen veggies, a can of diced tomatoes and diced chipotle peppers. She tasted proggy, but she was super easy. I loved the chipotle flavor, so bad nuintroducing it lol Take a peek:)

made muffins out of this recipe, yielded cookies half cooked, didn't take it to the bowl, stuck with the recipe..
we made these last week and they are really good.
