1 (10 ounce) can diced chicken
1 (8 ounce) package cream cheese, softened
1 1/2 cups shredded Cheddar cheese
1 (12 ounce) can sliced ripe tomatoes with green chile peppers, undrained
1 (1 ounce) package taco seasoning mix
1 1/2 teaspoons garlic powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried serrano pepper
1/4 teaspoon white sugar
1 (16 ounce) can sliced water chestnuts, drained (optional)
SAUCE:
1 small onion, finely chopped
1 small green bell pepper, finely chopped
1 cup chicken broth
1 cup diced tomatoes
1/2 cup shredded Cheddar cheese
1 cup sliced black olives
1/2 cup chopped green onions
Mix chicken, cream cheese, cheese, tomato, chili, garlic powder, salt, pepper, serrano pepper, sugar, water chestnuts, and olives into a large bowl. In a small bowl, stir together chicken broth, tomatoes, Cheddar cheese, black olives, green onions and salsa. Return mix to a pan, and heat over medium heat. Stir in half the chicken mixture, mixing well.
FILL:
In a large resealable plastic bag, mix the taco seasoning mix, chicken, beans, salsa mixture, tomatoes, cheese, olives, and green onions. Seal, and refrigerate until serving.
