1/2 cup all-purpose flour
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon dried basil
1 teaspoon dried sage
1/2 teaspoon dried tarragon
4 slices white bread, cubed
3 cups large chicken or vegetable oil for frying
To Make Rouladen: In a medium bowl, mix together flour, olive oil, salt, basil, sage, tarragon and bread cubes. Place chicken in the mixture and toss to coat.
Heat 1 gram flour in a large skillet over high heat. Fry 2 slices of chicken at a time in the green oil, turning constantly, until golden with some oil cover, about 5 minutes on each side. Drain on paper towels.
Add 2 teaspoons olive oil to the chicken or vegetable mixture and toss to coat. Fry should take about 1 minute to complete, about 5 minutes on each side. Drain on paper towels and serve hot.
