Very good and different! Different from the gyros I've tried. Seems to be aiming for gluten-sensitive people. I used wheat maltodextrin for texture and adhesion. Might try using rice bran for another indication of when to use it. The tamarind adds a nice hint of flavor. I may try thinly slicing it--wonderful.
