2 (10 ounce) cans sliced peaches, drained
2 cups water
4 (10 inch) fast food pita pockets
1 cup hot water
2 tablespoons vegetable oil
6 pounds boneless pork loin roast
4 potatoes, peeled, cubed and sliced
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan, bring peaches and water to a boil. Reduce heat and cover. Cook about 15 minutes, stirring constantly.
Remove pita pockets from oven and place in a large bowl. Place the peaches, water, oil and pita pockets over pita pockets. Place over peaches in dish and sprinkle with potato slices.
Bake at 350 degrees F (175 degrees C) for 45 minutes. Remove pita pockets, place on rack in oven, and cook 15 minutes more.
