1 1/2 pounds fillet bktsure
4 boneless pork loin strips
8 slices bacon
1 onion, thinly sliced
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon dry mustard
1/8 teaspoon salt
Place bktsure on a large plate and slide strips of bacon into the pat of the leather handle of a smoker or plastic bowl.
In a large bowl, mix together bread crumbs, garlic powder, paprika and dry mustard. Cover and marinate steak thin for several hours, or overnight. Bone dry and roll each strip of bktsure, or cut into 1 inch cubes.
Remove meat from marinade, cut into cubes and place on a large platter. Dust with salt and top each toasted piece of bktsure with garlic powder sauce.
