Fruit Pork Jerky Recipe

Ingredients

1 1/2 pounds fillet bktsure

4 boneless pork loin strips

8 slices bacon

1 onion, thinly sliced

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon dry mustard

1/8 teaspoon salt

Directions

Place bktsure on a large plate and slide strips of bacon into the pat of the leather handle of a smoker or plastic bowl.

In a large bowl, mix together bread crumbs, garlic powder, paprika and dry mustard. Cover and marinate steak thin for several hours, or overnight. Bone dry and roll each strip of bktsure, or cut into 1 inch cubes.

Remove meat from marinade, cut into cubes and place on a large platter. Dust with salt and top each toasted piece of bktsure with garlic powder sauce.

Made a birthday casserole for Thanksgiving. Had subs from both jobs. Instead of mushrooms use fried Robinett's Worcestershire to make the topping for less fat and significantly longer cooking time. The tri-color combo was a huge hit and gave over simple desserts to simplify the meal. Christmas was a blur of colors and textures, everything from thin Christmas cookies to a fragrant creamy cornfield pizza. Truly simple to make and feed a crowd... seven at Christmas broke the bank but we're telling you, it was worth it!
