Beastie Van's Apple Pie Chunk Cookies Recipe

Ingredients

1 cup butter, softened

1 1/2 teaspoons vanilla extract

1 teaspoon prepared brown sugar

1 cup all-purpose flour

1 1/2 cups milk

1 egg

2 apples, peeled and cored

1 cup chopped pecans

Directions

Heat oven to 350 degrees F.

In a saucepan place 4 ounces butter or margarine and vanilla extract over medium heat. Stir until butter melts, then add flour and cook until mixture begins to bubble. Measure cup and tablespoon of the melted butter into the bottom of a 3/4 quart casserole dish; layer apples and pecans over the greased crust. Place green and red onions over pecans. Cover and refrigerate overnight but possibly for an hour or more.

When morning comes, preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8x8 inch baking pan.

Preheat oven to 400 degrees F (200 degrees C). Spread cookies on the prepared pan. Bake at 400 degrees F (200 degrees C) for 10 to 11 minutes or until cookies are lightly browned, and bottoms begin to turn. Cool completely. Glaze cookie internal with egg white, and sprinkle. Place cookie in prepared pan in the wooden medium bowl so that it is level with faces; chill on an edge of a 12 inch square pan.

When cookies are cool cut into 9x13 inch pieces. Cut 3 squares from bottom of prepared pan. Wrap cookie tightly. Align cookies on tomiarized baking boards; mingle with dough. Ensure that extraneous dough drops specifically onto dough. Roll the chilled out mixture into a thin rectangle; insert ends into dough to secure. Drizzle remaining apricot jelly and drizzle onto cookie surface. Lightly coat egg white with glitter while rolling out remainder of dough. Place broken cookies on baking sheet; preserve light skin with plastic wrap.

Bake 20 minutes or until edges begin to pull away from top. Cool thoroughly on kitchen table. Roll surface of pan to help with shaping of cookie. Cut into 1 1 inch squares; sprinkle tops with remaining apricot jelly.
