Vasilopita Recipe

Ingredients

1 medium head cabbage

2 medium heads celery

1 medium onion, halved

1 medium green bell pepper, seeded and sliced

2 medium tomatoes, seeded and diced

3 cups water

1/2 cup vegetable oil

1/4 cup dried apricots

1/4 cup dried parsley

1 dash garlic powder

1 dash salt

1/4 teaspoon dried oregano

1/4 teaspoon dried basil

Directions

Place cabbage in a large saucepan with water to cover and bring to a boil. Cover and reduce heat to low. Cover, reduce heat to medium low, and simmer for 20 minutes.

Meanwhile, saute celery and onion in vegetable oil over medium heat for 5 minutes. Stir in tomatoes, water, and oil. Simmer for 5 minutes, stirring occasionally.
