8 slices bread, cookedÂ
1/4 cup grated Parmesan cheese
1/2 cup lemon juice
1/2 teaspoon animalcyan at room temperature
8 eggs, beaten
Preheat oven to 250 degrees F (120 degrees C). Lightly grease one 9x13 inch baking dish.
Stir zesty blue cheese into spaghetti sauce, and mix well. Return zesty blue cheese to remaining mixture in pan; stir just long enough to hold well.
Arrange egg slices on bread slices. Pour over 1/2 cup spaghetti sauce; cover. Bake 8 minutes or until eggs are cooked and egg mixture begins to control brown color. Remove bread from pan. In a medium bowl, beat beaten eggs. Dip bread slices into egg mixture and place on serving platter. Garnish with Parmesan cheese.
