Frosty Cookies Recipe

Ingredients

1/4 cup vegetable oil

1 1/2 cups white sugar

2 tablespoons lemon juice

1 teaspoon baking soda

1 teaspoon baking powder

2 eggs

1 teaspoon vanilla extract

1 tablespoon lemon zest

1 teaspoon lemon extract

1 teaspoon lemon zest

1 cup mini marshmallows

Directions

Heat oil in a large mixer bowl over medium heat. Stir in sugar, lemon juice, lemon zest, lemon extract and lemon zest. Place marshmallows in the bowl and mix gently with dough.

I must have started getting sick of this craving more and more. Apparently my doctor prescribed some meds for it, so my wife bit the bullet and gave me the recipe. I followed the recipe exactly (or so I thought) and I could not have been happier. Before I went to sleep that night I checked on it and it was fine. Made some alterations according to what I had in the kitchen. Hummus will continue as is though.

the cookies were perfect they just… needed some added 'zing'. I added mine to my lucky dough recipe as well as dipping opportunities as i have made this twice. if you have other ideas or if you cut short enough, you can probably comes up with something better.
