1 cup maple syrup
3 tablespoons prepared brown sugar
3 tablespoons peach schnapps
2 cups lemon rind
1 cup soy milk
1 teaspoon milk
1 teaspoon vanilla extract
4 ounces banana
In a blender combine maple syrup, brown sugar, peach schnapps, lemon rind, soy milk and milk. Puree with an electric hand blender until smooth.
Beat bananas into the puree; pour into sterile Tupperware or 4 lined glasses, place 1 large banana at each glass, and swirl with ice to make swirls on the back of glasses. Serve banana smooth with lemon ice cubes or marshmallows.
