4 tablespoons vegetable oil
1 medium yellow bell pepper, sliced
1 large orange pepper, sliced
3 large ripe tomatoes, sliced
1 cup diced onions
1 cup crushed cornflakes cereal
1 cup dried oregano
1 oz. olive oil
1/2 teaspoon salt
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon paprika
1 tablespoon chopped fresh parsley
1 teaspoon dried oregano
1 teaspoon dried basil
Heat oil in a large skillet over medium heat. Stir in pepper, orange pepper, tomatoes, onion, cornflakes cereal, oregano, olive oil, salt and garlic. Stirring constantly, cook until pepper is tender, about 10 minutes. Reduce heat to medium. Stir in basil and thyme, and simmer over low heat for 10 minutes.
Stir in paprika, parsley, oregano and basil. Bring mixture to a simmer, and heat through.
