1 1/2 cups butter, softened
2 1/2 cups packed light brown sugar
3 eggs
1 teaspoon vanilla extract
1 (1 ounce) package instant chocolate pudding mix
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper.
Stir together butter and brown sugar. Mix eggs, vanilla and pudding mix into butter mixture. Stir egg mixture into butter mixture until well blended.
Drop chocolate cookies by teaspoonfuls onto cookie sheets. Roll cookies into 1 inch balls. Place on cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until light brown. Remove from cookie sheets to wire racks to cool completely.
