Pork Braised Red Corn Rabbit with Green Corn Sauce Recipe

Ingredients

1 pound red stewed onion

2 packages dry onion soup mix

1 package dry corn soup mix

2 cups water

1 cup uncooked arugula

1 pound cubed red potatoes

Directions

In a large pot, bring water to a boil. Add onion soup mix and simmer for 5 minutes. Sprinkle brown sugar over onion mixture. Reduce heat to medium-low and add chicken and potatoes. Cover and simmer for 5 minutes. Add water and arugula. Simmer for 2 minutes.

Add broth mixture, arugula, carrots and celery. Reduce heat to medium-low and cook for 2 minutes.

this was so yummy and easy. i made it exactly as written and it came out fantastic. i made it a la wayne, since i had some red corn that needed to be used. no hogs here, just rabbits.

Very good recipe, and as I always do with recipes from this site, I braised the pork rinds before roasting them (in the oven, I put them in a little more cornstarch, 1 cup to 2 cups sugar, 1-2 cups flour). I also added a tablespoon of minced garlic. Very tasty, and quite moist, too. I think the zucchini adds another dimension, although I haven't tried it yet. I'm afraid I won't be able to find the pork in the grocery store...
