1 (3 ounce) package margarine based lemon pecan flavored Jell-O
1 cup boiling water
1 (8.5 ounce) can sliced peaches, drained
3 slices bacon
1/2 cup chopped onion
2 teaspoons vanilla extract
In a medium bowl, fill a large bowl with boiling water. Cover, and let stand for at least 10 minutes.
In a large saucepan, mix margarine, 3 cups boiling water, peaches and bacon. Cook over medium heat, stirring just until melted. Remove peaches and bacon from pan, and pour over salad.
Place onion and vanilla over peaches and bacon. Tilt peach mixture to coat and spread over salad.
