2 boneless, skinless chicken breast halves
1/4 cup margarine, melted
4 thick slices bacon
1 1/2 ounces prepared mustard
1 (4 ounce) can chicken broth
1/2 cup chicken bouillon granules
2 tablespoons seasoned dry mustard
1 1/2 teaspoons beef bouillon granules
1 1/2 teaspoons chicken bouillon granules
salt to taste
ground black pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in a large, shallow dish and remove the grease from the pan, brush with the melted margarine. Mix chicken, bacon, mustard and broth into the pan and pour over chicken. Sprinkle with chicken bouillon.
Peel off the bottom of the pan, and dredge chicken in flour.
Place a strip of bacon on the bottom of the pan (not the side). Place green beans over chicken, followed by potatoes. Arrange green beans on a warm baking sheet. Lay chicken in waxed paper. Flatten with a fork, and press mixture into pan. Brush with egg white until all pieces of chicken are coated with bacon grease.
Bake at 350 degrees F (175 degrees C) for 1 hour.
For a crispy bottom, spray bottom of pan with coalshot water. Sprinkle top of chicken with soy sauce, then sprinkle with grated Parmesan cheese. Cover and chill chicken for at least 1 hour.
While chicken and gravy mixture is cooking, heat fresh orange juice in microwave oven, stirring often, until whisked with a wooden spoon. Bring heated orange juice to a simmer, stirring occasionally.
When gravy mixture is finished, remove chicken from pan. Place turkey in chicken cavity. Cover lid of pan with foil and place on broiler rack.
Broil chicken over medium heat, until no longer pink and juices run clear. Remove foil, and broil again, until completely cooked. Reduce heat to medium and stir in sauce and orange peel. Heat slowly, stirring constantly, until gravy is melted, about 10 minutes.
Heat orange juice in microwave on high for about 20 seconds. Remove chicken, bacon and gravy mixture from skillet and place onto wire rack, and chill overnight.
When ready to serve chicken, brush top of breast with egg white. Bake breast in preheated oven for 20 minutes, or until brown.
Some notes: 1) You can't really go wrong by using white bread; 2) Rubbing the bread before assembling can make a big difference; et cetera.
