2 tablespoons olive oil
2 onions, peeled and diced
1/2 teaspoon ground black pepper
1 (5 ounce) can chopped green chile peppers, drained
1/2 cup chopped red bell pepper
3 1/2 pounds turkey flat rate breakfast burrito (or press into the bottom of a large resealable plastic bag)
1 (8 ounce) can whole kernel corn, drained
1 (1.25 ounce) package taco seasoning mix
Heat olive oil in a large skillet on medium heat. Stir in onions and pepper; cook 4 to 5 minutes. Stir in chiles, bell peppers, turkey, and mushrooms.
Pour in enough water to cover. Remove from heat and stir in taco seasoning mix. Pour mixture into burrito. Top with taco meat and taco strips.
Cover with plastic wrap and refrigerate overnight.
