1 large onion, sliced
3 cloves garlic, minced
3 green onions, sliced
2 tablespoons white sugar
1 tablespoon distilled white vinegar
2 large carrots, cut into 1-inch pieces
2 stalks celery, cut into 1-inch pieces
1 sweet pickle relish
4 potatoes, peeled and cubed
1 teaspoon salt
Place onion, garlic, green onions and sugar in medium saucepan. Cook over medium heat, stirring often, until very sugar browned. Remove from heat and stir in vinegar and carrots. Stirring constantly, bring mixture to a slow boil. Reduce heat to low, stirring constantly, and bring mixture to a full boil.
Bring a large pot of salted water to a boil. Add chicken, reduce heat to low, cover, and cook 20 minutes. Remove chicken, cut into strips, and place in medium saucepan.
Place onion, garlic, celery and relish in medium saucepan. Stir until cooked and well coated. Place potatoes into skillet. Season with salt and cook until tender. Serve hot.
