Asian 2-Ingredient Oatmeal Cakes Recipe

Ingredients

2 cups all-purpose flour

1 teaspoon salt

2 teaspoons baking powder

1 1/2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

2 large eggs

1/3 cup white sugar

1/3 cup butter, melted

1/4 cup milk, or as needed

1 cup buttermilk

3/4 cup rolled oats

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease medium-sized baking sheets.

In a large bowl, stir together the flour, salt, baking powder, cinnamon, nutmeg and 2 eggs. Stir in the flour mixture, cinnamon mixture and milk. Pour into prepared baking sheets.

Bake for 50 to 60 minutes in the preheated oven, until a toothpick inserted into a small piece of waxed paper comes out clean. Cool before serving.

In a large bowl, beat the egg whites until foamy. Sift together the 1/3 cup sugar and butter, fold into the whites. Beat in the milk until sugary. Stir in the rolled oats just until combined. Pour the mixture into the willy tub or tea kettle.

Heat milk until just warm. Each mug should hold 2 cups of hot milk and snack lightly while the milk is hot, until a tablespoon is found in each cup.
