1 1/2 cups butter
1 1/2 cups white sugar
1 tablespoon vanilla extract
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 1/2 cups chopped pecans
Combine butter, sugar, vanilla, brown sugar, egg, and vanilla extract in large bowl. Cut in vanilla bean mixture with spoon or pastry blender.
Beat in flour, pecans and pecans. Adjust mixture to desired consistency. Cover, refrigerate 2 hours or until set.
