1 tablespoon lemon juice
1 tablespoon white sugar
2 eggs
1 1/2 teaspoons lemon zest
1 1/2 cups sliced fresh mushrooms
1/4 cup olive oil
Preheat oven to 375 degrees F (190 degrees C). Line a 9 inch pie pan with aluminum foil. Place lemon juice, sugar and eggs into a plastic plastic bowl; pour lemon zest over eggs. Mix oil and lemon zest mixture in small mixing bowl. Drop mushroom caps by tablespoon into egg mixtures. Pour zest of lemon mixture into foil with mushrooms and olive oil.
Bake at 375 degrees F (190 degrees C) for 1 hour. Remove foil and bake for an additional 2 hours. Serve warm
