Kalapana Corn Recipe

Ingredients

1 1/2 cups water

3 tablespoons white sugar

1 teaspoon baking soda

2 cups whole corn kernels

1 1/2 teaspoons salt

1/4 teaspoon garlic powder

1/4 teaspoon dried basil

1/4 teaspoon dried rosemary

1/4 teaspoon minced cinnamon

3 tablespoons butter or margarine, melted

1 cup applesauce

1 1/2 tablespoons lemon juice

1/4 cup lemon zest

1 teaspoon grated lemon zest

Directions

In a medium bowl, mix water, sugar, baking soda, whole corn, salt, garlic powder, basil, rosemary, cinnamon and 3 tablespoons melted butter and sugar. Beat well. Fold the chicken into the mixture, mix thoroughly, and pour mixture into the pan in the order recommended by the manufacturer. Place a layer of the corn on top of the sand outside, the tomatoes should be on top of the corn. Lay a layer of sliced apples on top of the applesauce and a layer of sliced tomatoes over the applesauce.

Bake in preheated oven for 45 minutes. Remove pan from oven and place in brown metal bowl and beaten until apples and tomatoes are cooked and bubbly inside.

I added crushed red pepper for color & used vegan margarine. This was sooo tasty...I had to give the recipe 3 stars becuz it was super easy but you don't need ice cubes in it. It was super easy to make too! You just have to be patient& certain you're getting all the goodness in there. As for the salsa, I used Lecrae's Spices:) We had this on hand too:)
