Chocolate-Oat Cookie Fill Recipe


1 cup white sugar

1 cup light corn syrup

2 cups baking powder

2 eggs

1 tablespoon cornstarch

1 teaspoon vanilla extract

2 tablespoons lemon juice

1 teaspoon lavender essence

2 teaspoons lemon zest

1 cup butter or margarine, softened

3/4 cup buttermilk

1 teaspoon vanilla extract

1 teaspoon lemon zest

2 cups mini marshmallows

1 cup marshmallows

3/4 cup chocolatey, chopped peanuts


Heat oven to 375 degrees F (190 degrees C). Spread each cookie filling approximately half way between the cookie sheets.

Bake cookies in preheated oven for 7 to 9 minutes, or until lightly browned. Remove from cookie sheets to wire rack to cool completely.

Melt butter or margarine, buttermilk, sugar, lemon juice, lemon zest and lemon zest in large saucepan over medium heat; stirring occasionally. Bring to a gentle simmer, stirring constantly, until margarine and buttermilk are melted. Do this in separate batches to simplify; do not stir.
