1 1/2 teaspoons baking soda
5 tablespoons butter
1 teaspoon vanilla extract
1 cup granulated sugar
2 eggs
1/2 teaspoon vanilla extract
1 tablespoon vegetable oil
1 teaspoon baking powder
1/4 teaspoon salt
1 cup diced pecans
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, sugar, eggs and vanilla until smooth. Stir the flour into the creamed mixture until well blended, then stir in the oil, baking powder and salt. Drop by tablespoons onto the cookie sheet.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
