Preheat oven to 400 degrees F (200 degrees C).
Slice bacon into 8 pieces and place on a medium baking sheet. Place romaine lettuce over bacon. Spread the pork mixture over the lettuce.
Place sliced bacon over the cheese and mushrooms.
Bake, covered, in the preheated oven for about 30 minutes, or until cheese is bubbly.
