1 cup finely chopped onion
2 cups mashed banana
1 1/2 cups white sugar
1 cup crushed cornflakes cereal
1 tablespoon lemon juice
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease bottom of 9-inch pie pan or cake pan.
In a large bowl, mix the onion, packed banana, sugar, cornflakes cereal and lemon juice. Beat eggs, one at a time, using a large wooden spoon. Then mix the milk mixture with banana mixture.
Spread portions of pie into prepared pan. Place in refrigerator overnight, or overnight in freezer containers. Secure edges of wrap with butter knife. Bake at 350 degrees F (175 degrees C) for 30 minutes.
While pie is baking, heat lemon juice and vanilla in the microwave. Serve in 30 ounce canning jars or jars.
