2 tablespoons vinegar
4 tablespoons lemon zest
1 slice dry red wine
8 pork chops
1/4 onion, thinly sliced
6 tablespoons olive oil
1/4 tablespoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon dried basil and rosemary
1/4 teaspoon dried oregano rosemary leaves
2 dashes lemon zest
In a medium saucepan, mix vinegar, lemon zest and dry red wine. Bring to a boil, stirring. Reduce heat to low and simmer for 10 minutes. Mix in parsley and lemon juice. Stir in olive oil, garlic powder, oregano and basil. Bring to a simmer and cook for 5 minutes, stirring.
Stir pork and onion into the vinegar mixture and pour over the pork chops. Season with lemon zest and drizzle lemon zest over the chops. Sprinkle with chopped parsley and basil. Cover saucepan and simmer for 30 minutes.
