1 teaspoon cream of tartar
1 cup white sugar
1/2 cup vegetable oil
1 egg
1 teaspoon vanilla extract
1/4 teaspoon lemon zest
1/2 cup milk
3/4 cup buttermilk or instant chocolate pudding mix
1 cup flaked coconut
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan.
In a small saucepan combine cream of tartar, sugar, oil, egg, vanilla extract, lemon zest, milk and buttermilk. Keep covered; stir and continue to heat slowly. Add pudding mix, coconut and egg mixture. Mix well. Spread mixture over prepared pan.
Bake in preheated oven for 30 minutes. Turn oven off and chill for at least one hour in refrigerator.
Remove from oven and sprinkle with pudding mix. Pour in 1/2 cup coconut before removing from oven.
I followed the recipe exactly creating a rueful memory of when we used to eat this way back in the day. So good, as are the leftovers. I'd make it again.
