This is a great way to use up surplus chicken and vegetables from the farm. I put in half the chicken and didn't have to cook it much longer than stated. I also used sage sausage instead of bacon. It turned out great!

This was easy and quick enough for my family, but I did find it lacking in some other areas. First, I had to make sure the chicken was soaked, so I cooked it for a bit longer (and let it finish cooking up first, if possible). Second, I had to drape foil over the veggies for a few minutes to prevent them from sticking, and it seemed unnecessary (but it did help). I was also a tad bit leary of including all the spices in one big package of chopped chicken, so instead I just included a couple of teaspoons of each ingredient, and voila! I had my chicken covered and covered again, and it was done in minutes. Oh, and I got 13 superbowl kisses (10 for a lucky winner)!

I added more chicken just because I had leftovers. I did not add the sour cream but added the chicken broth and chicken seasoning. The combination of flavors was amazing. My husband said, "This is a one pot meal! You don't need the bread alone!" You can make larger portions and freeze some to take when you have more to cook. A big thank you to the recipe poster for a new way to prepare pasta.
