4 green apples, cored
3 red apples, cored
3 green onions, thinly sliced
10 black currants, stemmed and sliced
2 tablespoons white sugar
1/3 cup unsweetened baking soda
1/2 cup cinnamon
1/3 cup butter
Combine sugar
glaze apples, and cut into 2 thick slices.
Peel red peppers, removing seeds, and cut into large wedges.
Set aside. Make a slighly pour of olive oil in a large, heavy skillet over medium heat. Heat sugar over low heat, stir in the brown sugar, and melt. Stirring constantly, pour over apples, peppers, squash, etc. Pour over apple mixture, and serve
Circling the interior of the pan with a damp towel, thoroughly coat apples. Put pepper rings on top. Place fruit on the center of the pan.
Bake in preheated oven for 45 minutes. Do not brown. Remove from oven, and brush with butter or margarine. Cool completely, peel, and cut into squares.
