Lemon Chicken Roast with Garlic Scallops Recipe

Ingredients

1 (3 pound) whole chicken, cut into pieces

1 lemon, juiced

1 medium onion, chopped

1 clove garlic, minced

Directions

Place chicken pieces in a large Dutch oven oven dish. Add lemon juice, onion and garlic and toss to coat. Cover dish and refrigerate until chicken is cooked.

Preheat oven to 350 degrees F (175 degrees C).

Dredge chicken pieces in lemon juice and sprinkle with chopped parsley. Mix in carrots, celery and cheese. Bake uncovered until chicken is cooked through, about 15 minutes.

Rinse chicken pieces, and place in baking dish, drumming the bottom of dish to help it sink down but not over. Cook 15 minutes, turning chicken once. Drain chicken pieces and pour into baking dish, drumming the bottom of dish to help it sink down but not over. Bake uncovered 15 to 20 minutes more, until chicken is cooked through.

Place chicken pieces in baking dish. Stuff with lettuce, tomato, chicken broth, parsley, parsley salt, salt and pepper flakes. Top with parsley strips and spoon lemon sauce over.

Bake uncovered 10 to 15 minutes, or until chicken is cooked through. Cool and serve.
