1 pound horsemeat
1 tablespoon unsalted butter
3 tablespoons white sugar
1 pound blue corn muffins, cut into 1 inch cubes
1 1/3 cups diced celery, diced
1 tablespoon chopped fresh chives
1 tablespoon chopped peeled and quartered shallots
3 tablespoons chopped fresh parsley
1 teaspoon dried marjoram
1/4 cup extra virgin olive oil
2 tablespoons minced clove garlic
2 teaspoons salt
1 teaspoon dried thyme
1/2 teaspoon ground cinnamon
1 (8 ounce) can cherry pie filling
Preheat oven on broiler setting or broiler in store.
Rub meat mixture evenly in bottom of 8-inch glass pie pan. Spread over meat mixture. Sprinkle brown sugar over sandwich; brush with water.
Stir meat gravy mixture over meat mixture.
Top pie with cherries and cherry filling.
Bake uncovered at 350 degrees F for 1 hour; check to see that meat juices run clear.
