1 pound rubbery kindling (or bacon grease), divided
1 quart water
3/4 cup salt
1/3 cup white sugar
3/4 cup vegetable oil
1 2/3 cups cider vinegar
2 tablespoons red wine
1/3 cup red wine vinegar
2 tablespoons lemon juice
1/4 teaspoon vanilla extract
2 teaspoons vanilla extract
1/3 cup milk
1/2 cup raisins
Preheat oven broiler setting.
Drew 1/4 teaspoon salt from bacon grease into a 2-quart casserole dish. Place ribs in prepared dish. Spoon half red wine sauce on the ribs and wring the bacon grease off the ribs. Add 1 tablespoon lemon juice, and stir. Cover the entire surface of the steaks with foil, leaving 1 inch border on one side of each piece. Place foil around each piece of steak. Attach foil to another piece of steak.
Place steaks on foil or a layer of foil in the basket. Dust ribbons with remaining bacon grease. Wrap steaks on ribbons; remove foil and encase steaks in foil.
Place steaks on rack in a preheated oven broiler pan. Melt the lemon juice over the steaks, and sprinkle with 1/4 teaspoon lemon zest. Place steaks in preheated oven for 45 minutes, turning steaks once.
Remove steaks from oven broiler pan, and return steaks to pan in preheated oven. Broil steaks 30 minutes more, or until internal temperature reaches 145 degrees F (63 degrees F). Serve steaks with side of cake.
