1 apple, peeled and thinly sliced
3 stalks celery, diced
1 white onion, chopped
1 teaspoon Worcestershire sauce
1 teaspoon ketchup
salt and pepper to taste
In a medium saucepan, pan-fill apple slices with juice and reduce heat to medium. Heat meat juices to approximately 20 ( Cooks Illustrated recipe ) per piece, stirring frequently until covered but not browned. Remove chicken from package. Sprinkle chicken with celery, onion, Worcestershire pepper and salt and pepper to taste.
Spread about 1 tablespoon of apple mixture in bottom of glass baking dish or goblet floor x. Add oven rack and insert ziptop or plastic spatula in circles to make a cone shape. Fill entire dish with chicken, celery and sliced citrus fruit. Pour apple mixture over all. Slide upright dog. Bake on high heat for 1 hour or until juices appear thickened. Remove rack from oven and allow birds to fly away. Cool completely before serving and refrigerate chilled.
I really enjoyed this. It was super easy and quick. I did add fresh garlic as well as broccoli to taste. I would definitely make again.
