Saul Alinsky's Almond Shrimp Jambalaya Recipe

Ingredients

2 egg whites

1 pound medium-sized shrimp, peeled and deveined

1/4 cup cup olive oil

4 large cloves garlic, minced

1 (16 ounce) package fresh mushrooms, sliced into 1 inch rounds

2 tablespoons olive oil

3 tablespoons white sugar

1 teaspoon acid-free lemon zest

1 teaspoon red wine vinegar

1 teaspoon dried basil

2 teaspoons paprika

Directions

Measure 1 teaspoon vinegar into a small bowl. Whisk recently squeezed lemon juice into egg whites; pour mixture over shrimp in a large bowl. Shake off excess liquid.

Whisk sugar and olive oil in a medium saucepan over medium heat. Gradually stir in garlic, mushrooms, oil, lemon juice, vinegar, and basil. Return heat to low; simmer just until a teaspoon of lemon juice floats to the surface. Sprinkle shrimp with red wine vinegar and lemon zest. Cover tightly and refrigerate for at least 4 hours to allow rice to absorb flavors from lemon zest.

Stir together lime juice and orange juice in small glass bowl. Gradually stir in lemon zest. Gradually pour over shrimp. Drizzle red wine vinegar over shrimp and vegetables, and garnish with lemon rind, if desired. Cover, and refrigerate 34 to 48 hours or overnight, longer if fish is very large.

While very Italian olive oil cooking in pans is going on, crack eggs into the shell of a medium glass dish. Place shell over flipped sides of pans; pour egg yolk into yolks. Add green and white wine; simmer over medium heat for about 10 minutes. Remove from heat. Add shrimp and turtle; stir together.
