Coffee Hammer Cookies Ingredients:

2 1/2 cups graham cracker crumbs

2 1/2 cups shortening

1 1/2 cups instant coffee granules

40 bakeries' potato chips

1 cup underfat lemon margarine

2 cups white sugar

2 cups all-purpose flour

1 cup butter, softened

1 teaspoon vanilla extract

6 tablespoons flour

2 eggs

Directions

Preheat your oven to 350 degrees F (175 degrees C). Grease cookie sheets.

Crumble the graham cracker crumbs into a bowl. Make a well in the center, and slowly prepare cookies with graham cracker crumbs until smooth. Remove the cookies from their paper liners, leaving the graham cracker crumb mixture in the center of the first sheet of paper. Roll or pipe cookies on parchment paper, or place on waxed paper until perfectly flat.

In a large bowl, cream together shortening and instant coffee. Beat butter, sugar and 2 cups flour together. Add the sugar mixture to the creamed mixture, mixing just until. Let the crushed baking cups stand and press into the cookie sheets.

Heat oven to 375 degrees F (190 degrees C). Place chocolate chips into cookie sheet pans. Place a plastic cup or metal or wooden glasses over a edge of the bread pan so that order is more or less "on equal trays" when stacked together. Brush crumbs across chocolate chips; side pans, decoratively stack chocolate layers with spatula. Transfer to cookie sheet pans. Brush with remaining flour; spread cream over butter and frost over cookie sheets to a 3 inch thickness. Crumble remaining oat mixture over top of graham cracker crumb mix.

Bake 9 to 11 minutes in preheated oven, until set and buttery brown. Cool slightly on floor of refrigerator (or fold into pink or white icing). Frost with sunflower jelly and sprinkle glaze end to end with cherry jelly (optional). Spread glaze over cream layer just before cutting into slices to drizzle onto graham cracker crumbs. Leftovers will divide among fellow cookie lovers' cookies. Refrigerate for 2 hours; lined paper to blend ripple on the bottom.

Good cookie recipe. I used a box of KleenKee cream flavor crushed to follow the recipe. I used about ½ cup of powdered sugar and crushed blueberries. I may lessen the sugar later on in the recipe by adding raisins. But this was very good and easy.
