1 cup blueberries
1 cup granulated sugar
1 egg, beaten
1/2 teaspoon ground cinnamon
1 teaspoon salt
3 cups all-purpose flour
1 cup lemon juice
1 teaspoon lemon zest
1 cup butter, softened
1 teaspoon vegetable oil
1 teaspoon orange extract
Combine blueberries, sugar, egg and cinnamon in a medium bowl. Mix in salt, celery salt and lemon juice. Stir with hands until blended. Mix in lemon zest and butter.
Stir flour into blueberry mixture, mixing just until combined.
Heat oven to 375 degrees F (190 degrees C). Bake for 2 hours, or until a toothpick inserted comes out clean. Allow cookies to cool on baking sheet for 5 minutes. Remove from baking sheet to wire racks to cool completely.
