Apple Lime Oatmeal Bread Recipe

Ingredients

1/2 cup butter

1/2 cup packed brown sugar

1 egg

1 cup white sugar

2 tablespoons water

1 teaspoon active dry yeast

1 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 (1 pound) loaf bread

1/2 cup milk

Directions

Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 2 quart bowl. In a small bowl, mix together 1/2 cup butter, 1/2 cup brown sugar, egg and 1 cup white sugar. Stir in water. Place yeast in a very clean bowl.

Align the dough in the bowl. Turn to coat with oil, then add 1/4 cup salt and 1/2 cup cinnamon. Dough will be sticky and lumpy. Cover and let rise in a warm place for 2 hours.

Lightly oil a 10x15 inch baking pan use a double boiler if necessary. Shape dough into long grain loaves. Place onto the baking pan and allow to rise until just slightly sticky. Meanwhile, preheat oven to 375 degrees F (190 degrees C).

Mix milk, yeast, sugar and milk together. Cook loafs over medium heat for 2 hours. Drain and cool.

Transfer bread halves and pour into pans every 5 inches or part way, joint space being full, on year round rack in preheated oven. Bake in preheated oven for 40 to 50 minutes, or until golden brown. When cool, count loaves and divide into 10 bread bags. Place bottom three loaves in a two quart bowl. Sprinkle top with coarse salt and pepper. Set aside. Preheat oven to 400 degrees F (200 degrees C).

Empty loaves into two 1 quart baking pans. Using a serrated knife, cut each cross section in half. Lay 1 loaf in each pan, then scoop bottom half into a medium bowl. Fold top half over bread in a large bowl.

Using a sharp knife, slice bread into 3/4 inch slices. Place about 1 inch shy of the middle on each baking sheet, fold over the bread to prevent sticking. Brush with milk, then sprinkle with nuts.

Bake in preheated oven for 18 to 26 minutes, until clear.

Excellent recipe and great flavor. I'm going to try using bonito flakes next time, but it would have made it even better.
