1 recipe pastry for a 9 inch double crust pie or cookie sheet
1 cup margarine, softened
1/2 cup packed brown sugar
1 egg, egg yolk
1 teaspoon lemon extract
2 cups milk
1 teaspoon vanilla extract
8 dry Mulled Wine Doughnuts
Grease three cookie sheets.
In a medium bowl, cream together brown sugar, egg and lemon extract. Beat in milk, then add the wine. Beat in flour, maybe a little. Mix until moistened. Shape doughnuts into 1 inch balls.
Turn out onto one sheet. In another fold a roll of dough into a small roll. Make sure all sides of dough are together. Fill each roll with half an egg, so that there is 1/2 cup of egg. Shape together using your hands on top of the sauce.
Cut each roll of dough into 8 wedges. Place each wedge two inches apart onto ungreased cookie sheets. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Remove to wire racks to cool completely. Serve hot with jam drizzled with pearl sugar.
