Stuffed Cheese Meatballs I Recipe

Ingredients

2 pounds lean ground beef

1 tablespoon vegetable oil

1 large onion, chopped

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

2 (4 ounce) jars tomato juice concentrate

1 (15 ounce) can garbanzo beans, drained

1 (8 ounce) package taco seasoning mix

1 (4 ounce) can tomato paste

1/2 teaspoon dried basil

1/2 teaspoon dried parsley

salt and pepper to taste

Directions

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.

In a large bowl, mix the lean beef, oil, onion, garlic, and basil. Mix in oregano and tomato juice concentrate. Fry meat in oil for 2 to 3 minutes on each side. Drain grease, and strain meat into small pieces.

Stir the tomato juice concentrate, tomato paste, basil, oregano and tomato paste into the beef mixture. Season with pepper, salt and pepper. Place meat in prepared dish. Seal edges and spray with cornstarch.

Bake covered in preheated oven for 45 minutes in the preheated oven, or until juices run clear.

I swept this thing looking for fresh red bean but it was masked by the scarecrows. A unassuming bean caught my eye and wanted more attention. I substituted onion rings for the ears. Probably won't make these again but let you know when I've actually made them.
