3 eggs
1 3/4 cups milk
1 1/2 cups vegetable oil
2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 cup chopped dates
Beat eggs in large bowl until frothy. Stir milk, oil, baking powder, vanilla and dates into eggs. Bring mixture to a boil, shaking off the froth.
Reduce heat to medium-low and beat egg into the flour mixture. Mix in finely chopped dates until evenly blended.
Transfer batter into prepared muffin cups.
Bake in preheated 90 degrees F (60 degrees C) pans for 10 minutes. While muffins are baking, line the muffin cups with paper liners. Serve warm in shallow bowls with aluminum foil.
