Eggnog Tarts Recipe

Ingredients

1 1/2 cups shortening

1 cup white sugar

2 eggs

3 1/2 teaspoons vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

2 teaspoons baking soda

1/2 teaspoon salt

2 tablespoons butter

1 cup eggnog

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 1/2 cups confectioners' sugar

1 teaspoon vanilla extract

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a large bowl, cream together shortening and white sugar until smooth. Beat in eggs, one at a time. Combine the flour, baking powder, baking soda and salt; stir into the creamed mixture. Mix in melted butter and eggnog. Fold in the vanilla extract. Spread into the bottom and sides of a 9-inch spring form pan.

Bake in preheated oven for 50 to 60 minutes, until a toothpick inserted into the center of the tart comes out clean. Cool on the baking sheet.

While baking it, combine cream, eggnog, vanilla extract, whipping cream, confectioners' sugar, vanilla extract and butter. Beat until smooth.

Very nice cookie recipe. used pistachios for the topping but everything was pretty much the same recipe as when I made it in a skillet.
