Chicken Hauptmann Recipe

Ingredients

1/2 cup butter

2 tablespoons all-purpose flour

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon paprika

1 1/2 ounces crumbled all-purpose croutons

1/2 pound cooked chicken

Directions

In a large skillet, melt butter over medium heat. Mix in the flour and add salt, paprika, and croutons. Stir fry, turning occasionally, until eggs are firm, about 10 to 15 minutes. Remove from heat when chicken is cooked.

In a small bowl, mix chicken with the flour mixture and egg. Discard chicken and egg. Combine croutons, chicken, and flour mixture. Return mixture to skillet while frying. Brown on both sides.

Beef chop, about 15 minutes. Drain excess fat, but reserve for future use. Fry remaining ingredients in low heat until meat juices are reduced by 1/2 cup.

Meanwhile, saute onions and celery in a small bowl until tender.

Add fried chicken and celery mix cubes to pan. Mix together, but do not mix. Bring mixture to a simmer over medium/low heat. Heat oil in a large skillet over medium heat, pour into pan, and stir until mixture is hot, about 10 minutes.

When chicken is browned, add celery and onion chunks, and cook until color is almost gone. Cover, reduce heat to medium, and cook, stirring constantly, until vegetables are tender, about 10 minutes. Decrease heat to low, and add chicken mix cubes. Season with remaining 1 teaspoon salt and pepper.

Return chicken to pan Heat oil in same pan so that it is bubbly, about 1 minute. Boil noodles for about 5 minutes, then stir in pork sausage and mustard. Cook about 1 minute. Fill racks, cups and drippings with broth until nearly empty.

Place onions and celery into heated broth reservoir, and stir noodles, celery and celery mixture into broth. Put lid on skillet. Brown meat and vegetables on both sides; serve at table.
