1 1/2 cups nonfat margarine, softened
1 1/2 cups white sugar
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon vanilla extract
1 teaspoon cream of tartar
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) pans.
In a large bowl, cream together margarine, sugar and flour until smooth. Stir in the baking powder, baking soda and vanilla extract. Mix with a pastry blender or two hands until the dough is smooth. Place the batter in the prepared pans.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely on a wire rack.
