1 tablespoon vegetable oil
2 medium onions, chopped
3 medium carrots, diced
1 3/4 cups water
1 (10.75 ounce) can hominy, divided
2 cups brown sugar
1 tablespoon water
1 teaspoon paprika
1 cup tortillas
1 1/4 cups (16 ounce) cans chorizo sauce
2 tablespoons Mexican Creole seasoning
Heat oil in 2 small saucepan over microwave. Stir in onions and carrots and saute 3 minutes. Stir in two and 1/2 can of water; cook, stirring, 3 minutes more.
Remove mixture from heat and stir in hominy and brown sugar. Stir in 1 cup can of water, paprika, chorizo sauce and Mexican creole seasoning. Fold after mixing, about 1/2 cup for each or recipe. (Try adding in more or less if you want something a little thicker.) Serve immediately.
very good, a little bland, i added 2 Tbls. cream cheese a little chili powder, some garlic powder and cracked black pepper to the second batch and they came out better
