Zucchini Pistachios Recipe

Ingredients

1 (8 ounce) package cream cheese, room temperature

1 (8 ounce) container plant-based crumbles

12 (1 ounce) squares frozen same-size pizza dough, thawed and cooled

3 (15 ounce) cans cooked fresh zucchini, drained, with juice

1 (10 ounce) package frozen pizza crust dough, thawed

Directions

Preheat oven to 400 degrees F (200 degrees C). In a medium mixing bowl, blend cream cheese, crumbles, and dough; stir until smooth. Spread mixture on bottom of a 9x13 inch baking pan.

Stir in zucchini and pizza cubes; sprinkle tops with salt and pepper. Spread egg and tomato paste mixture evenly over creamed cream cheese.

Cover pan with foil; bake in preheated oven for 15 minutes. Reduce oven temperature to 375 degrees F (190 degrees C) and bake an additional 6 to 10 minutes, until evenly brown. Remove from oven; top with crust dough as desired. Bake for an additional 5 to 7 minutes and serve immediately.
