1 pound ground beef
1/2 teaspoon dried minced onion
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/2 teaspoon ground black pepper
3 eggs, beaten
1 pound sliced mushrooms
1 tablespoon olive oil
2 (10 ounce) cans tomato paste
1 (16 ounce) package shredded mozzarella cheese
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the ground beef, onion, oregano, salt and pepper. Shape into 1 inch balls. Place each ball of meat in a 9 inch skillet. Cook at high heat for 1 1 to 2 minutes, or until evenly brown. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Saute the mushrooms until soft and golden. Transfer to a large bowl. Drain and set aside.
Return mushrooms to skillet and saute over medium heat until golden. Drain off liquid and set aside.
In a medium bowl, whisk together the tomato paste, cheese and onion mixture. Mix in eggs, mushrooms, tomatoes, olive oil and 1 cup shredded mozzarella cheese. Transfer to a 9 inch pie pan. Pour tomato mixture over meat mixture. Place in oven to simmer for 20 minutes. Add tomato sauce prior to baking.
Bake in preheated oven for 50 minutes, or until cheese is bubbly. Top with mushroom mixture and bake an additional 20 minutes.
