2 (3 ounce) packages cream cheese, softened
3 eggs
3 teaspoons lemon juice
1 teaspoon vanilla extract
2 teaspoons lemon zest
1 teaspoon lemon zest
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, mix softened cream cheese, eggs, lemon juice, lemon zest, and lemon zest. Pour into a 9x13-inch baking dish. Cover with foil, and bake in preheated oven for 1 hour. Remove foil and bake for 10 to 12 minutes, stirring occasionally. Reduce oven temperature to 350 degrees F (175 degrees C). Spread cream cheese mixture over cream cheese layer.
Bake cream cheese layer 15 to 20 minutes longer or until the cheese is bubbly and golden brown. Cool slightly, and pour cream cheese over cream cheese filling.
Top cream cheese layer with pineapple filling and crabmeat. Return to a cooling rack, and gently spoon butter mixture over cream cheese.
