1 cucumber, seeded, chopped
1 jalapeno pepper, seeded and minced
1/4 cup white sugar
5 green onions, chopped
3 slices Dijon mustard
1/2 pint mayonnaise
2 (16 ounce) cans crushed cornflakes cereal
1 teaspoon prepared horseradish
2 teaspoons dried rosemary
1/2 teaspoon salt
1 teaspoon lemon juice
1/2 cup sifted all-purpose flour
In a medium bowl, stir together cucumber, jalapeno pepper, sugar, green onion, Dijon mustard, mayonnaise, cornflakes cereal, horseradish, rosemary, salt, lemon juice and sifted flour. Cover and refrigerate about one hour.
Return mixed to a large bowl. Add the egg, brush mixture evenly with the yellow oil and toss to coat.
