English Toffee Recipe

Ingredients

1 tablespoon vegetable oil

1 small onion, chopped

1 cup finely chopped fresh ginger root

1 medium sweet potato, peeled and diced

3 teaspoons orange juice

2 teaspoons vanilla extract

5 teaspoons bourbon

1 teaspoon cognac

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, heat oil over medium heat. Stir in onion, ginger, and sweet potato. Bring to a boil, stirring to break up clumps. Reduce heat to medium-low and cook, stirring frequently, for 3 to 5 minutes. Remove from heat; stir in orange juice, vanilla, bourbon and cognac. Pour into a large 9x13 inch baking dish.

Bake uncovered for 30 minutes in the preheated oven. Remove rack from oven to cool. Cool completely. Place onions and ginger over refrigerator to cool.

Excellent rice, everyone stayed very friendly and approachable. I used tempeh which is so much tastier than tofu and it was so gentle on my taste. I will definitely make this again.
