1 tablespoon vegetable oil
1 small onion, chopped
1 cup finely chopped fresh ginger root
1 medium sweet potato, peeled and diced
3 teaspoons orange juice
2 teaspoons vanilla extract
5 teaspoons bourbon
1 teaspoon cognac
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, heat oil over medium heat. Stir in onion, ginger, and sweet potato. Bring to a boil, stirring to break up clumps. Reduce heat to medium-low and cook, stirring frequently, for 3 to 5 minutes. Remove from heat; stir in orange juice, vanilla, bourbon and cognac. Pour into a large 9x13 inch baking dish.
Bake uncovered for 30 minutes in the preheated oven. Remove rack from oven to cool. Cool completely. Place onions and ginger over refrigerator to cool.
